Perfect Brunch

I have often wondered what constitutes the perfect ' brunch'. Is it suppose to be a real combination between breakfast and lunch? Like a pancake sandwich? Or a breakfast soup?

This morning I put together a little brunch for my husband. It consisted of stuffed eggs, grilled tomatoes, and potato pancakes.







Eggs: boil four large eggs. Add a teaspoon of baking soda to the water so the shells peel off easily. Scoop out the cooked yolk. Boil half a potato. I cut it up and boiled it quickly. When the potato is soft, mash it up with a fork. Combine the eggs and some of the egg yolk. (as much as you like, I go light on the yolk). Add salt, pepper and a teaspoon of mustard. 

I plucked these grape tomatoes and basil leaves out of my garden this morning. The grape tomatoes go straight on the frying pan with green top attached.

Stuff the eggs with your potato mixture and cooked grape leaves. The basil leaves are a fresh garnish. 

Potatoes: Slice them as pictured above - and fry them. Not difficult.
