A man and his sandwich - a love story

When my husband came home from work, he was so hungry he felt weak. He made himself this sandwich. It is a Baguette with bacon, mayo, lettuce, cheese and Ranch Dressing. It was one of the most disgusting things I have ever seen. It reminded me of something served at one of those crappy Greek deli’s in the Bronx.

But, he said to me, “Naomi, never underestimate the love between a man and his sandwich.”

The Cheesecake Queen

Naomi's Turtle Cheesecake

Of all the recipes that I have made, I am most famous for my cheesecakes. I was living in Brooklyn New York when I made my first cheesecake. After collecting three different cheesecake recipes, compiled my grocery list, I headed off to the Kosher grocery store just down the street.

I was surprised that the recipes called for Philadelphia cream cheese. I thought that cheesecakes called for some other kind of cheese. I made all three cheesecakes in one evening.

My roommate said, “wow, you are serious about this, aren’t you?”

Well of course, if one wants to learn how to do something well, one must be serious about it.

Of the three cheesecakes, two of them were perfect, and the third was not so perfect...

Rainbow Pancakes

Rainbow pancakes for the Kids.

This was a great recipe to make. It is a bit time consuming, and dirties up more dishes than I would like, but seeing the look on the kids face when they see rainbow pancakes is priceless.

Ingredients
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg

cooking spray

Blackberry Cobbler

Blackberry Cobbler
One of the things I love the most about Washington State is the wild blackberry bushes that grow everywhere. When I was about twelve years old, I started my first little business. I picked gallons of wild blackberries then sold them to local restaurants. I was able to make enough money to buy some clothes for school and some ice cream.

Last summer, I introduced my husband to blackberry picking. He was not that good at it. I am a pro. So, I canned several pounds of wild blackberries and sold them for $8 each. I plan on doing it again this summer. It is a lot of work, but it is a tradition for me.
There is so much moisture in blackberries, that you cannot really make pies. The bottom of the pie will be mushy. Cobbler is the way to go with blackberry.

I made this loaf...two years ago. After picking blueberries at one of our local You-Pick farms, we had to think of something creative to do with them.

2 1/4 cups white sugar
2 cups shredded zucchini
3 cups all-purpose flour

A very unusual dessert

Ingredients
2 cups white sugar
2 cups all-purpose flour
1/2 teaspoon salt
1 cup butter
1 cup water
3 tablespoons unsweetened cocoa powder
1/2 cup sour cream
2 eggs
1 teaspoon baking soda
1/2 teaspoon cayenne pepper

1/4 cup butter, melted
1/3 cup unsweetened cocoa powder
2 cups confectioners' sugar
1/4 cup milk
1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, combine sugar, flour and salt. Set aside.
In a small saucepan, bring 1 cup butter, water and 3 tablespoons cocoa to a boil. Remove from heat. Add to flour mixture and beat until smooth.
In a separate bowl, Mix sour cream, eggs, baking soda and cayenne pepper. Add to the cake batter. Blend well. Pour batter into 9x13 inch pan.
Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until toothpick inserted into center of cake comes out clean. Allow to cool.
For the Frosting: Melt 1/4 cup butter, add 1/3 cup cocoa. Add confectioners sugar, milk and vanilla. Mix until smooth and free of lumps.

Decorating the Cake
Spread frosting on the cooled cake. Cut into squares and serve. When I make this cake, I like to serve it with a side of vanilla ice cream and one banana. They pepper is what makes the flavor of this cake very unique. Few people will be able to guess what is in this cake.

French Toast Fingers

French Toast Fingers
This was a delicious little breakfast that I made for my family. Serve it on a side of fruit or mixed berries.

2 eggs
1/4 cup milk
1/4 teaspoon salt
1/2 cup strawberry preserves
8 slices day-old white bread
confectioners' sugar

Directions
In a small bowl, beat eggs, milk and salt; set aside. Spread preserves on four slices of bread; top with the remaining bread. Trim crusts; cut each sandwich into three strips. Dip both sides in egg mixture. Cook on a lightly greased hot griddle for 2 minutes on each side or until golden brown. Dust with confectioners' sugar if desired.

Layering punch

When I first saw this picture, I thought this was a wonderful idea for parties. This concoction has three things: cranberry juice, blue Gatorade and seven up.

The look is achieved by following two elementary rules.

Rule one: juice with more sugar will be denser and should be on the bottom. Juice with less sugar, and more bubbles should be on top.

Rule two: pour slowly. The look is achieved simply by slowly pouring the blue Gatorade ontop of the cranberry juice. Pour the Gatorade onto a spoon to prevent it from pouring deep into the cranberry juice. The ice floats because it has some air in it. It made me wonder whether or not we could do this with other juices.
